The cacao inside this chocolate is the Trinitario varietal. This bar has a cooler roast profile to capture notes of honey, grape and toasted walnut.
Shirl + Moss hand sort, roast, crack, winnow and stone grind for up to 80 hours before ageing our chocolate. The chocoate is then tempered, molded and hand-wrapped in their little factory in Wellington, New Zealand.
The cacao is ethically sourced, meaning Shirl + Moss pay sustainable prices for their beans to ensure the farms can uphold ethical practices and offer support to their local communities. Cacao sourced from Fazenda Camboa Farm in Brazil.
